Chocolate maker, croissant lover, macaron artist.
Fabrice trained as a pastry chef in The Loire Valley in France and holds a patisserie degree. Previously Fabrice worked in a Michelin star restaurant as well as a conference centre and patisserie bakery. After working as the head pastry chef in a Leeds restaurant for 10 years, he moved to education in 2008. He is now a programme manager within the Food and Drink department.
”I look after all aspects of catering from chefs to bakers. Myself, a colleague, and one of our students even participated and reached the quarter-final of “Bake off – Crème de la Crème” (BBC2) in 2017! I have a passion for all food-related subjects as well as teaching. I am keen to transfer some of my skills to our students and ensure they are work-ready by the end of their courses.”
